In form designer (JSM) where did the other column layout options go?

I used to be able to have options like small-large-large and I think the opposite too, but now I only see two options available? Are they gone?

Today I've worked around this by just copying it from another form into my new one. But I'm not sure if functionality removed is part of a release notes somewhere?

They appear to be gone as I only see the same two options you do. You could open a support ticket with Atlassian if you want to investigate further.
