I want to desing a kanabn with columns = quarters (or any other field), not the status.

No, you cannot add quarters, only columns. You can add quick filters that will be based on different user and you can also limit who can see those boards and who can edit them. Quick filters are mostly based on JQL.

What type of project are you using?
With a Business/Work Management project you get a native board that is similar to Kanban but not quite the same as the Kanban board available with Software projects.
However the business project board allows you to switch between column grouping types using Status, Priority, Assignee, or Category.
You could use the Category field to enter the Quarter information and then change the board display to group by Category.
This is available only in the boards that come built-in to Business projects, at this time.
In a Company Managed Software project kanban board you can use Quick Filters as suggested by @Nikola Perisic or Swimlanes based on Queries. Swimlanes will create horizontally oriented grouping rather than vertically oriented groupings.
