The Issue Status field is available in the Create window from the Project page. However, we are hoping we can also add this field to the Create window from the Testing page>Create Defect as well. Screenshots will illustrate this.

it seems you are using Xray for testing.
If the option is not there reach out to Xray support if this is possible or if this could be added as a feature on their backlog.
