How do I get the statuses to appear in the same order as I have them in my workflow? It appears they're in alphabetical order.

Have a look at this KB on how to change the order. Basically what you do is add the opsbar-sequence property to each transition and give it a number. It is recommended that you start with 0 and then increase it by 10 for each transition. This would allow you to add new statuses/transitions and sort them without having to change the number on all of the transitions.
