Are you trying to make the change for a Team Managed project or a Company Managed project?
The cards on a board for a Team Managed project cannot currently be customized. There is a change request open for that:

What type of project are you using: company-managed or team-managed? You may find that information and the bottom-left side of the screen expanding area.
The first image you show appears to be the backlog from a company-managed project, and the second one appears to be from a team-managed project.
The fields on the backlog and board cards cannot be configured on a team-managed project. Here is a suggestion to add that feature to Jira, however it does not appear Atlassian plans to work on that soon based on their comments from August 2022: https://jira.atlassian.com/browse/JSWCLOUD-17336
