If an app can edit the quick-add button, how can i edit that part myself ?I want to have a big button everywhere in our project to request a Test ticket.

Welcome to the Atlassian community.
If you want to add a quick-add button you will have to create your own app to add that button.
There is not option in Jira Cloud for you to create such buttons otherwise.
