We recently noticed our standard working days change from Monday to Friday to Monday to Sunday. Is there a way to change this for all of our existing boards in the backend so that teams do not have to individually change it?

Yes, in order to do this:
1. Go to three dots of the board and click on Configure Board
2. Navigate to working days
You can also set the non-working days as well.
