Oh... The above is for CMP projects if you are using a TMP projects, then use the following steps:

* click on project settings 
* select issue types
* select the issue type that is using the field
* click on the field and clear the default

To disable the default value on Company-managed projects, please go to:

* Jira settings > Issues.
* In the Fields section, click Custom Fields. 
* Find the custom field you want to configure and click on the three dots > Contexts and default value.

* Under the "Default Configuration Scheme section," click on Edit Default Value
 
* Set the value as none and click on Set Default.

With the above steps, you can disable the default value for your custom field.
