When a header is created, any checklist items that are created underneath it are assumed to belong to that header (until another header is created).
Is it possible to search for checklist items which belong to a header?

By your answer, I understand that you are on Jira Server and not Cloud, is that correct?
The documentation you linked is for Checklist for Jira Server, so it will not be useful for cloud users.
