As an administrator of Atlassian products, in this case Confluence, is it possible to see how often a space is accessed, or which space was last used?I would like to see the use of confluence across spaces

Yes, this is possible via Confluence Analytics for Cloud Premium and Enterprise:

On the Confluence Cloud Standard Plan, there is no built-in tool to analyze the activities on your spaces and content.
If you do not mind using a 3rd party app you will find here some solutions for your use case.
