How do I set up confluence email notifications to show the specific change made to an article?

You can't send a dedicated notification, not at least the way the notifications work in Jira. User receive notifications from spaces/pages the watch or they created themselves. Read more about notifications here https://support.atlassian.com/confluence-cloud/docs/subscribe-to-email-notifications/
