Is it possible to have more than one field on the X or Y axis of the Two dimensional filter statistics gadget for the dashboard (without having to create an additional custom field that has the concatenated value of the two fields)?

No, that is not possible with the out-of-the-box gadgets.

You could either use the concatenated field approach you describe or investigate marketplace gadget addons to do this.

I had a similar requirement and I did that by using Smart filters in the X-axis
