Create an automation that triggers on the transition you want the date for, something like this:
(I used due date here since I don't have a date custom field.)

Yes, and...to Mikael's suggestion:
If you want this date to be "only" the first change to the specific status, please add a condition after the trigger to check if the custom field is empty. That will prevent updates to the date when an issue cycles (backwards/forward again) in flow.
