We used to get a daily summary by mail at midnight, but for some time now we have been getting it at irregular times.Can this be fixed somehow so that the email comes at midnight?

What kind of summary were you getting?
If you are talking about Jira's recommended updates, then no, you can't set up a specific time. Only the interval and if you want to receive them or not.
I have always received a daily summary in which it is written who has worked on what. This came at midnight, but now ist at 12:37 am.
The thing I'm talking abot is the "[Confluence] Confluence changes in the last 24 hours". Maybe this can help you more...
