I created a jira project based on template CRM. But i edited the workflow creating new status and deleteing one existing. All its ok. But, i cant edit the kanban board to reflect the new status.
I'm a Admin of all instance. but is not possible edit.

Are you sure that is Kanban board of company-managed board?
Look that instruction please.
If you are using team-managed project, look at - Configure columns and statuses in your team-managed project
