Pick time stamp through post functions

Create a date time field called In progress time stamp and capture time stamp ticket when it move to in progress status

You have actually gave the solution yourself :)

* Create a date time field
* Add this field to the view screen of your issue types inside this project
* Go to the workflows of your issue types
* On the transition to "In Progress" status add a post function
* Click "Update Issue Custom Field"
* Select your custom field
* As value write %%CURRENT_DATETIME%%
* Publish your workflow
