Setting up organizations within JSM

Hi all, bew to Jira SM. Our company is about to use JSM as a ticketing system for our clients (companies).
First question: how can we set up different test clients within our JSM Cloud?
Second question: how can we set up per client one or two employees working for this testclient?
Each with their own mailaccount.
