Consider creating a custom field for your priority. I do this for one project that required “Severity”. Of course this has limitations. It doesn’t have the same behaviors and characteristics of the Jira priority field.

Sorry Priorities are global level. And these are associated with the priority schemes, and these are assigned to projects.

if once the priority changed. all the projects included, wherever the priority scheme associated.
