I created a task with subtasks for my open items, can I block that task to avoid other users than I see it?

Issue level security scheme in a project can help to restrict browse access to issues in a project. Your jira admin must configure an issue security scheme and associate the security level system field to achieve this. I am unsure how preferable it would be.
