I have created several Kanban boards to better manage our work. I would like to delete the original scrum board that was created when the project was created. Will I run into any issues doing this?

When you delete a Scrum board you delete all the sprints that were created within that board. You will lose access to all historic sprint/scrum related reporting for the project.
