As an account admin I get a notification every single time anyone updates a job. Is there a way to ensure I only get notifications if I am tagged?

Yes. You need to change the notifications (project settings > notifications) and ensure that you are not in any group/roles that is associated with any notification event.

I don't see any notifications under 'project settings'?

I go Settings > Projects > Project Settings.

No notifications item to edit.
