I have a field in the issue called "Number of Accts". In the Epic, can I calculate a sum of all the issues that have a value which are associated to that Epic?

Welcome to the community.
You might be able to do this with the Automation feature using the Smart Values options. I have not tried to build automation for this type of task myself, so I am not able to provide the details on exactly how to do it.
Otherwise there are not-free apps that would need to be added to your instance to enable you to do this, such as Adaptavist ScriptRunner.
