We want to create a custom workflow for the sub-task "review sub-task". We would like to create only two statuses: approve or reject with outcomes related to the status selected.
How do we set this up?

You can do that by associating the workflow to the workflow scheme, you can actually add a workflow to that particular issue type. Refer to the documentation below:
