How do I make a new type of subtask that that I can use it when I click create child issue. Right now I can create a new subtask type and call it Acceptance Criteria, but I cannot use it as a child issue.

Have you verified that the new Acceptance Criteria issue type is available for the project you are using? In other words, have you added it to the Issue Type Scheme used by the project?
