We have EPICS that are 100% done yet going stale in the Backlog sidebar and backlog dropdown. the problem is getting worse and worse - there must be a solution too this!

Have you changed the status of the Epic itself to Done?
When I do that, the epic is removed from the Epics panel and the Epics drop down on the Backlog screen of my NextGen Scrum project.

Yep, that is the behaviour I expect and that is the behaviour in Classic projects. I've checked all my NextGen epics and everything is set to DONE - the EPIC itself, all tickets and all subtasks.
There must be something there keeping them alive!
