If I have different members on my team,  But I dont want them to see all cards, where do I assign each card to the members of my team?

Analyzing the description of your question, I'm not completely sure if:

1. You would like to completely restrict the view of the issues to the specific team member assigned to it (Even out of the board view)
   OR
2. You just need to display a customized board for each team member, displaying the issues assigned to them but allowing them to access issues assigned to other team members by using the issue navigator

Also, can you please confirm if you are using Jira Next-gen or Classic?

Supposing you are using a Jira Classic project:

To achieve the scenario 1, you can use issue security levels to restrict the project issues to specific assignees, adding the field "Assignee" in the security level:

To achieve the scenario 2, you can create a new board and edit the board filter to display only the respective issues assigned to the users. These would be steps:

1. Create a new board
2. Navigate to the board > ... > Board settings > General > Edit Filter query
3. Add the board query with the following parameter and save the filter:

   assignee = currentUser()

   P.S: The parameter above will restrict all users to only see the issues assigned to them, including yourself. That being said, this new board would be used by your team members, while the old board with the original filter would be used by Admins to display all the project issues.
