Basically i am trying to create a trend graph of how the epics are flowing across different stages from project management perspective.

To get the status duration you can try Time in status for Jira Cloud. And you can view at which statuses were issues at some project in past with Issue History add-on. Both plugins data are available for export and for the next analyst.
