Is there any way to exclude one or several tasks when you create a sprint burndown chart ?
Hello @Nathanaël G'BAMY welcome to the community. You can't do that with the native reporting functionalities, anything that is in the Sprint ends in the report. In order to make a report like that you could use Eazybi instead.

You could create a new board for the project without the undesired tasks.
The burndown report (and all other reports) of this new board is exactly what you are looking for.
Step-by-Step:
I'm assuming you are using the Cloud version of JIRA. If you have a server version and this tutorial didn't work for you, let us know for a more precise flow.
Creating a filter
Pro Tip: Think generally here. Something that could work on different sprints over time - maybe using labels, components or issue types
Creating a board
While looking at the Active Sprint of your project:
Now you have both views. The original board reports won't change and shows everything. The new board reports show only the filtered issues data.
