Can i limit the people who can edit a custom field on my issue?
If not what other options do we have to limit the visibility of a field etc?

Welcome to the community
Is not really possible out of the box. You can work with workflow properties to restrict which users can edit the issue based on their role/group in each status.
Or buy an addon like scriptrunner that will allow you to hide or make the field read-only.

I cannot find the workflow properties at all ;/
you can search on google for JIRA documentation and things like workflow properties. I know the documentation can be difficult to find things in when you don't know what section to look in
