Does anyone know how to remove, by default, Epics from the roadmap that are complete, all stories 'done' and released?

Unfortunately the feature has not been implemented yet. You can vote and follow the issue for it here: https://jira.atlassian.com/browse/JSWCLOUD-17996 The workaround is to change the filters and bookmark the page.
