Is there a way to auto-generate / clone user story, singular or batch i.e. apply setting to one story today and have duplicate appear for review on defined date?
Also is there a way to bulk assign stories to an Epic?

Per your description, I understand you want to auto-create a duplicated Story when the original Story reaches a determined date. Additionally, you want a way to bulk link Stories to your Epic. Is that correct?
About the creation of duplicated issues, Atlassian acquired the third-partner Codebarrel, which provides an automation app that allows you to schedule automation rules to bulk create duplicate tickets. These would be the steps:
1 - Create a custom field to define the date when each Story should be duplicated - Or use a system field, like Due date 2 - Navigate to Project settings > Automation and configure the following rule to run once per day:

Doing the steps above, all the Stories which have reached the date you set will be duplicated, optionally copying the fields you want from the original Stories.
About the bulk linking of Stories to an Epic, if you are using a Classic project, you can follow the steps below to do it:
1 - Create a JQL filter to display all the issues you want to link 2 - Click to Bulk Edit the issues > Edit its Epic link field, typing the Epic they should be related to:
