I used to be able to add an excel file and click on it with a right click and then I was able to change the view of that file. How can I to this after the "confluence-editing-improvements"?

The behavior that you are facing does indeed stem from the Editing Improvements. With this in mind, a Feature Request has been raised to tackle a situation that sounds pretty similar to yours. The good news is that it is already in progress!
