I don't see an option for dropdown menus in a Classic Project like you do on a Next Gen Project.
Is it possible?
What "type" of custom field are you adding?
Dropdown field. It doesnt seem to be available on the Classic Project.
Use select list single choice when creating custom field under classic project.
