Why was the export to excel removed
I have a list of issues and I want to export them to excel?
I don't see the option to export to excel anymore
I only see export to excel CVS
I how do I get a list of my issues in excel?

The option to export to excel does not exist anymore (I think it was removed in 7.1). You can however export to CSV and then open it in excel. There are several addons that can do this though, like "Better Excel Exporter for Jira".
