My Jira instance has many more status levels than I need so I'd like to review them all. Can I export them from Jira? I'm not an Admin so my permissions are limited.
Even a screen capture would help.

If you are not an administrator, perhaps the status of some Issues may be hidden from you.
I think you should have to contact the administrator to get this information in jira-settings.
