How to create Average Time spent between opening and closing a story in Jira cloud

When you say "Average", you are meaning the average time between the creation and resolution of multiple stories, is that correct?
You can use the Average Age Chart Gadget to return this information. Here are the steps:
- Create a filter to return the issue(s) you want
- Navigate to your dashboard > Add gadget > add the Average Age Chart Gadget and configure the filter you created
