I would like to query all logged hours for the last 3 days, but not pick up prior days.
Created = startOfDay(-3) will do it for you. Just add the column "Time Spent".
For getting that, you need help of an addon.
The cheapest one, as well as the one that we use, is Time Reports: https://marketplace.atlassian.com/plugins/timereports/cloud/overview
That wouldn't retrieve hours logged in the last three days on issues created 2 weeks ago... but total timespent of issues created in the last 3 days.
