Can you advise what the best practice for PBI's / Jira tickets that are unfinished but have been worked on with time logged against sub tasks at the end of a sprint.
Our concern is work that has been logged so far , will be lost and moving the PBI to the backlog / next sprint will affect our stats.
Step by Step options please.

Moving an issue from one sprint to the next does not touch any time you have logged on it. The time logs move with the issue.
Best practice for sprints is to do what the software does automatically - moves unfinished issues into the next sprint as the old one closes.

What we want to know is how much time is logged on the ticket in each sprint it gets moved into . In other words hypothetically speaking , if I log 5 hours in sprint 1 , then 4 hours in Sprint 2, then 3 hours in sprint 3 does JIRA show these stats anywhere ? we want to capture how many hours in each sprint that is logged against the Jira ticket.
Is there a report clearly that shows numbers?

I've not found anything to do this (although the data can be extracted from the history).
This is mainly because you don't use estimates and logs for this in Scrum - you measure work done to complete an issue.
