Currently I have a workflow in place for epics. But now I want to have a different workflow. I have some epics. But I what I want is after changing the workflow I don't want this new workflow to have impact on the previously created epics. I don't want to map states from old to new. I want to them to be kept as it is.
New workflow doesn't include every state of the old.
Can this be done?
I'm afraid not. An issuetype in a project can only have a single active workflow. If you remove statuses that issues currently are in, they must be remapped to (a) new status. Otherwise they would end up in an inconsistent state. But Jira just won't let you.

That's not possible to have different workflows for the same issue type (Epic in this case).
You could add the new statuses to the existing workflow and add a Condition for the transition to each status that the Created field (date) must be >= 2024-04-16 or whenever you implement it. But it would need to be done on all of the new statuses, and you probably need to do the same with the existing statuses where it is < 2024-04-16.
