I saw the recent upgrade to projects - which includes the calendar, horizontal nav, background color, etc., but I can't find a way to apply those features to my existing projects.
Do I really have to move all issues to a new project and recreate workflows, etc.?

Can you provide a link to the documentation/post you are referencing when you say "I saw the recent upgrade to projects..."?
In my experience that horizontal navigation is available only for Jira Work Management type of projects, not in Jira Software projects. But it is possible I missed an announcement.
If I am correct that it is only available for JWM, and if you are working with JSW projects, then you won't be able to apply that "style" to your projects. The only way to get that style then is with JWM projects, and you would have to create such a project and move your issues to it.
Note that JWM project functionality is very different than JSW projects in other ways, so you should consider that before moving you data.
Thanks that helps a lot and does describe my situation. I thought the JWM features I saw were an upgrade to JSW projects (many of our projects aren't strictly SDLC could go either way).
