We would like to provide some templates that pertain across a subset of the spaces in our Confluence instance. Is there a way to easily deploy, and easily update, a template across a specified subset of spaces?

You add the template to the Global Templates and Blueprints. Go to General Configuration >> Select Global Templates and Blueprints. Then Click on Add Global Page Template.
Afterwards, you can go to any space and select the template to create your pages.

Follow the steps noted by @Victor Mutambuki above to create the global templates. The only caveat to this is all your spaces will see the global template.
If the requirement is to restrict access to these global templates for some spaces, then you would want to make blueprints. Blueprints can be disabled in spaces: Doesn't look like global templates can be disabled by space. Blueprints (to me) are not easy.
Since the Atlassian way is "open concept", I recommend making global templates. If you need to direct certain groups not to use some of the templates, then that is a training situation.

Appreciate the answer. Unfortunately, the size and complexity of the organization make it impractical to not manage visibility of templates. I'll look into blueprints. Thanks.
