According to the documentation as specified under for the queryAndRender function:

It should be possible to make use of expressions or functions in the fields section, but this seems to not work what I would like to do is something similar to the following:
id.queryAndRender(Name:1234567;Code:[entry.id];Name|Proces.URL.asLink([entry.Procesname]);table)
so that my rendering occurs as a link to some other documentation. This seems to not work? The last field is not being populated, assuming that this functionality is not supported.
Maybe I am missing something from my end?

Indeed, something is (was) wrong with the expressions support in this function.
We have now fixed it in cloud version of ConfiForms (as you have marked your question with). Should work for you

I see I asked the question for specifically confluence cloud - but we are hosting our own servers - I believe.
I suppose this would require a patch then - is there a way I can track the bug then somewhere?

For the hosted Confluence you will need to update the ConfiForms app (confirmed to be the same issue on the DC version, unfortunately)
We will include a fix into the upcoming version of ConfiForms - 3.13.4
