I had a paid subscription and right now I can’t justify it does that mean my account was deleted and my boards all gone.
If you cancel the paid subscription you will be downgraded to the Free Trello. While there are some restrictions in the Free plan (e.g., you can have only 10 boards and 10 collaborators) you can still continue to use Trello. Note: remember to use the same account and not create a new account when you downgrade from paid to free. If you create a new account, then none of your previous boards will be visible in the new account.
If you go to admin.atlassian.com, do you see your instance there?
You can move to Free, and you will have access to your instance. However, you will lose something like permissions.
More on that here:
https://support.atlassian.com/jira-cloud-administration/docs/explore-jira-cloud-plans/
But the access will depend on how long you haven't logged to your instance.
Please also be aware, if you go to a free plan for Jira Cloud, these free plans have a 120 inactivity limit. If you don't use the product for 120 days, the product and the data in it will be deleted immediately.

It has only been less then a month since my subscription was ended and when I tried to login it had me create a new account and all my boards are now gone. I didn't realize if I ended it and went back to free my account would be deleted and I would lose all my boards. I am so disappointed and bummed by this.

If the subscription ended and it has not been more than 120 days, the site must be there,
If you created a new site, that's a new site, hence will be empty.
If you still have some information about your site, please reach Atlassian support. They can help you:

Can you tell us what you see under admin.atlassian.com?
When you open that, you cannot log in with your credentials?. it asks you to create a new site?.
