I have some issues with the new editor in Trello cards. I already used markdown in my description long before this new editor, markdown is easy and fast to write (I don't need helper, I edit markdown docs all day long in my work).
With new editor, markdown render directly (which cause weird behaviour when adding markdown syntax when typing) can I turn off instant markdown render to only display it _properly_ only after I validate my description ?

You can definitely type in markdown if you prefer, but not in RAW markdown I'm afraid. The markdown you enter will automatically convert to the intended formatting as you're typing. We have a preview option once the description has been saved that lets you review the markdown behind the scenes though!
You can also copy and paste markdown into the description of a card and it will automatically convert to the appropriate formatting.
The only workaround I'm aware of is to put your markdown inside a code block. So, for example, you could type ``` before you start adding your markdown, and that will let you enter markdown formatting without it being converted automatically.

Yes, markdown is directly formatted, this is not very handy... especially when trying to insert code snippet into description (3 quotes + name of language),. This behaviour force to save our description, and re-edit it in order to remove added markdown syntax...
I saw that preview in RAW markdown was available, do you plan to make this view editable ? (That will save lot of times for me... since I have to re-edit each of my card when I create a new one)

Understandable - I don't believe there are plans for that, but I see a public feature request for it here. It's a feature request for Confluence, but the goal is to have a consistent editor experience so my bet is that if Confluence adopted it, Trello would too: https://jira.atlassian.com/browse/CONFCLOUD-68272
There's no harm in making your voice heard there I'd say, if it's a feature that's critical for your organization!

Another example than happen to me few minutes ago, I use quotes when describing pseudo-code. I put them but editor doesn't recognize those (my text appear this way when saving : my `customVar` example).
So I have to re-edit description, remove last quote, re-append it and then text is properly formatted (this append for every markdown syntax : bold, italic, blockquote, etc...)
This is a little time consuming but very frustrating

I agree with @Leger Charlie , I don't see why you can't just make raw markdown editable. The editor tries to be "clever" but it really isn't at all, it's just inconvenient and frustrating. Wouldn't this be an easy feature to implement?

I haven't used Trello in a long time. After years, today I installed it again. First card I put in and Trello put code where it didn't belong. I went to edit the markdown and it is blocked. I've been using Trello for 5 minutes and I can't wait to get back to notepad++. Absurd that you don't let this be edited.
