With the latest SourceTree update I can't seem to find a way to view pending changes and new files. It was very convenient and allowed to stage entire folders.

This has been hashed out in detail on this other question, and repeated in countless others. Instead of continuing to complain to the community (most of us have no influence over SourceTree development), please go to the relevant bug report in that post and vote.
