You can create a new table via CSV import, though until recently you were unable to update a table by import. I believe Akeles is working on this feature at the moment.
In my experience, if you destroy a table the connections from your post-functions will be severed - this means that you will need to remap all of your post-functions, even if you create a new table with the same name. This may also be something Akeles is working on.
