Hello,
When users raise a request from within Slack using the Atlassian Assist app, how can we make it so that it reads their email and brings that to Jira as field or a detail?

Welcome to the community. You can use Jira Automation to pick up the reports account and copy the email address to an new text custom field when the ticket is created. Link: https://support.atlassian.com/cloud-automation/docs/jira-smart-values-users/
you will be looking at {{reporter.emailAddress}}

What about getting the emails of other users that the reporter added to that ticket?
