Anyone using the app Approval Path for Jira and have successfully configured the Webhook step to add a comment to the issue? Their documentation specifically calls this out as something that can be done, and I can successfully do this from another application, but I am struggling to implement it from within the Approval Path app.

First you have to setup Jira automation. Create new rule. Add webhook trigger https://confluence.atlassian.com/automation/triggers-993924804.html and action step (add comment in your case)
Second. Add webhook step in definition in Approval Path for Jira.
Fill url (from Automation for Jira) and header:
