I've been testing things in the system and had a project named SALES that I deleted and I am trying to create another with the same name, but the system won't let me.
What do I need to do to be able to create another project with the same name?

You need to delete your project permanently. To do that you must be a Jira Admin then ff this instruction - https://support.atlassian.com/jira-service-management-cloud/docs/permanently-delete-a-service-project/
