Even thought the list view provide a column for adding a category, and I can actually add several categories, when I try to assign on to the cell in the column, the page seems to quickly refresh and remove the selected category.
Why can I not insert a category for the list?

I've seen that happen sporadically in my Free Jira environment. I have not proactively investigated it, but will notice a few days later that the problem no longer happens.
Is it consistently happening to all users with all browsers in your environment? Have you tried other browsers or clearing your browser cache?
If you view the issue details when this happens do you see that the Category value was actually saved?
I am working on the theory it has something to do with the configuration of the project, and so that's where my investigation is at the moment.

I found an issue in Atlassian's Jira that was just marked as Fixed yesterday, but there is no explanation about the fix or details about rolling out the fix.

Are there other users of your system that can try adding Category values to see if they experience the same problem?
Have you just started using this functionality for the first time, or have you been using it for a while? Has it worked previously and just started showing this behavior?
Are you working with a Team Managed project or a Company Managed project? That information will show at the bottom of the navigation panel on the left.
Have you made any customizations to the project?
Do you have more than one Work Management project? Does this happen in all of them?

Working with my team yesterday, turns out we did make some key form changes that may have actually fixed this in 2 places.
After a little while, we were entering categories freely.
If this does NOT work for anyone, let us know.
